- 1/4 cup Extra virgin olive oil
- 3 Gree onions chopped
- 1 Shallot, minced
- 1 teaspoon cumin seeds
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 10 oz Spanish Manchego Cheese
- 1/2 cup roasted red peppers
- 12 Sourdough Baguette slices, 12 inches thick

Cut cheese and roasted red peppers into 1/4-inch-thick slices and arrange cheese slices in a single layer in a 13×9 dish. place 1 pepper strip on each cheese slice. pour dressing over cheese; cover and refrigerate overnight. Let stand at room temperature 1 hour before using. Top bread slices with 1 cheese and pepper stack. Drizzle with dressing made from cheese and serve, or broil until slightly toasted.
