Garlic Mushroom Chicken
- 4-5 Chicken Thighs or Breast
- 1 cup sliced Mushrooms (Baby Bella)
- 1/2 cup sliced onions
- 4 cloves of garlic
- 1 /2 Artichoke hearts
- 2 cup chicken broth
- 1 tablespoon dried Rosemary leaf
- 2 tablespoons of ground Thyme
- salt & pepper to taste
- 1/2 cup Mirassou Pinot Grigio
Garlic Mushroom Chicken is a very simple recipe that pairs perfectly with Mirassou Pinot Grigio. What makes this recipe so easy is that I use my crock pot.
Start by adding 2 cups (minus 1 1/2 tablespoons) of chicken broth to the crock pot. Place the chicken in, then season with salt and pepper, along with 1/2 tablespoon each of rosemary and thyme. Set the crock pot to high and cook for 2 hours.
While the chicken is cooking, sauté mushrooms and onions in a mixture of butter and olive oil over medium heat. After 7 minutes, add the garlic along with the remaining rosemary and thyme. Reduce the heat to medium-low and stir in the wine. Bring the mixture to a simmer, then continue to cook until the alcohol has mostly cooked off and the sauce has reduced to about one-third of its original volume, which should take approximately 12 to 15 minutes. Once done, combine this mixture with the chicken in the crock pot. Let it cook for an additional 3 to 4 hours.

About 15 minutes before the chicken is ready, whisk together the remaining chicken broth and 1 tablespoon of cornstarch in a small bowl until smooth. Stir the cornstarch mixture into the sauce and cook while whisking until it thickens. Once the sauce and chicken are done, serve over rice and enjoy with a glass of wine!
