(Ethanol vapor is the process in which ethanol is converted from a liquid to a gaseous state. When wine is swirled in a glass, ethanol evaporates quickly from the thin film of the wine on the wall of the gas.) For that reason, red wine should be served in a glass with a big round bowl and a large opening. The larger shape bowl allows the aromas to escape quickly, making the wine taste smoother. White wine glasses are smaller to help preserve floral aromas and maintain a cooler temperature. As tempting as it may be, do not pour your wine to the top. Save some room for the bouquet.
