California Pinot Grigio, Mirassou

I would like to introduce Mirassou California Pinot Grigio. This Pinot Grigio is easy to drink and is produced by Mirassou, a well-known brand with a rich history that spans over 160 years. The winery specializes in crafting wines from sun-drenched California grapes.

Mirassou California Pinot Grigio showcases intense aromas and flavors of peach, pear, and citrus, complemented by crisp, lively acidity, creating an exceptionally refreshing experience. This versatile wine pairs beautifully with spicy dishes, grilled poultry, seafood, pork, and is perfect alongside a charcuterie board.

Pinot Grigio is a white wine grape that typically produces a soft, low-acid wine with a slightly aromatic quality. Known for its crisp stone fruit and citrus flavors, California Pinot Grigio adds a refreshing touch to a variety of light meals. The grape itself has a pinkish-gray skin, which is reflected in its name “Gris,” meaning gray in French. Pinot Grigio is the Italian name for this grape, which is also commonly referred to as Pinot Gris, a noble variety with origins in Alsace, France.

Including this Pinot Grigio is an excellent way to enhance the flavor of the dish and pairs perfectly with it. The Garlic Mushroom Chicken is light and flavorful. Adding a green salad and French bread will create a delicious meal.

Garlic Mushroom Chicken

  • 4-5 Chicken Thighs or Breast
  • 1 cup sliced Mushrooms (Baby Bella)
  • 1/2 cup sliced onions
  • 4 cloves of garlic
  • 1 /2 Artichoke hearts
  • 2 cup chicken broth
  • 1 tablespoon dried Rosemary leaf
  • 2 tablespoons of ground Thyme
  • salt & pepper to taste
  • 1/2 cup Mirassou Pinot Grigio

Garlic Mushroom Chicken is a very simple recipe that pairs perfectly with Mirassou Pinot Grigio. What makes this recipe so easy is that I use my crock pot.
Start by adding 2 cups (minus 1 1/2 tablespoons) of chicken broth to the crock pot. Place the chicken in, then season with salt and pepper, along with 1/2 tablespoon each of rosemary and thyme. Set the crock pot to high and cook for 2 hours.

While the chicken is cooking, sauté mushrooms and onions in a mixture of butter and olive oil over medium heat. After 7 minutes, add the garlic along with the remaining rosemary and thyme. Reduce the heat to medium-low and stir in the wine. Bring the mixture to a simmer, then continue to cook until the alcohol has mostly cooked off and the sauce has reduced to about one-third of its original volume, which should take approximately 12 to 15 minutes. Once done, combine this mixture with the chicken in the crock pot. Let it cook for an additional 3 to 4 hours.

About 15 minutes before the chicken is ready, whisk together the remaining chicken broth and 1 tablespoon of cornstarch in a small bowl until smooth. Stir the cornstarch mixture into the sauce and cook while whisking until it thickens. Once the sauce and chicken are done, serve over rice and enjoy with a glass of wine!
